#MealPrepMonday ft. Chicken & Veggie Skewers

I haven't done a Meal Prep Monday post on my blog in agessss, although I have posted a decent amount on my Instagram page. But I'd like to post all my meal preps on here as well. So, I'm going to go back through all my meal preps over the last year or two and post them here on Mondays here and there. And by the time I've shared all of what I currently have, hopefully I'll have more to share!

Fresh salad with spinach, sun-dried tomatoes & the remaining oiled/seasoned peppers & red onions from my skewers prep. ➡️ • Medley of brown rice, black barley & daikon radish seeds - seasoned with salt, pepper, garlic powder, cumin & rosemary. ➡️ • Baked sweet potatoes - seasoned with salt, pepper, garlic powder, cumin, rosemary & BBQ rub - baked at 400° for 55 minutes. ➡️ • Baked skewers with slices of chicken breast, red/orange/yellow peppers & red onions - mixed/prepped in a large bowl with garlic oil & seasoned with salt, pepper, garlic powder, cumin, rosemary & dill - baked at 400° for 22 minutes.
